I think I’m finding a groove, but I don’t want to speak too quickly because I just might lose it! I truly loved the pieces this week and found it hard to pick just three!
As much as I want to cook, I don’t do much variation in my cooking. But this week, I was not only inspired but I got in the kitchen and made a couple of the dishes! I plan on making the rest within the next week. Of course that meant I didn’t choose just one!

We did like the filling. I couldn't get the the boxty itself to cook all the way through. I think it was too thick. I'm going to try again tonight since the recipe is so simple and make them thinner… the boxties, with a different filling. LOL!
I had trouble with the thickness, too. It took two batches before I figured it out. They only look like pancakes, hahaha. Good luck!
LOL! I was going to make it in the waffle maker, but I didn't do it soon enough! I will try again!
Those wake up oatmeal cups! They look amazingly delicious. And the chicken and mushroom boxty? Oh my word am I hungry. Off to eat!
Everything looked so good. I couldn't imagine these on my own and they have all natural ingredients, even a gluten free option! Yum yum!

I didn't get to make the cups this morning, but there's always tomorrow! I'm ready to taste them! They make my mouth water. I just started making my own chicken stock from leftover chicken, so the cabbage adds some veggies. I had a head of cabbage in my fridge that I didn't know what to do with it. This was perfect.
