I make my own baby food. I find it simple – normally making a weeks worth at a time. I believe the best time to get your children to like veggies are as soon as possible. It seems to work – my son eats almost every veggie in the house. I can make up to two weeks supply with my storage system. I normally breakdown the food into parts – one part protein, one part liquid, and two parts vegetables. My daughter loves it – not sure if it’s because I make good food or because she eats everything.
The latest recipe is a family favorite for when we’re ill (as we are now) or on cold days. It’s a souse from the Bahamas.
Ingredients:
- Two cups of water
- Four tablespoons of lemon juice
- One pound of chicken (wings and breasts work best, but any chicken broken down works)
- Two celery stalks
- Two large carrots
- One large potato
- 10 kernels of whole allspice
- 1 bay leaf
- 1 teaspoon of thyme
- Salt and pepper to taste
Directions:
- Bring water to a boil
- Add two table spoons of lemon juice
- Add chicken, salt, black pepper, thyme, allspice kernels, bay leaves, and celery stalks
- Cook for ten minutes
- Peel potato and carrots
- Add potato, carrots and two more table spoons of lemon juice
- Cook for an additional twenty minutes or until the potatoes and carrots are soft.
