Homemade Baby Food – Recipe: Souse

I make my own baby food. I find it simple – normally making a weeks worth at a time. I believe the best time to get your children to like veggies are as soon as possible. It seems to  work – my son eats almost every veggie in the house.  I can make up to two weeks supply with my storage system. I normally breakdown the food into parts – one part protein, one part liquid, and two parts vegetables. My daughter loves it – not sure if it’s because I make good food or because she eats everything.

The latest recipe is a family favorite for when we’re ill (as we are now) or on cold days. It’s a souse from the Bahamas.

Ingredients:

  • Two cups of water
  • Four tablespoons of lemon juice
  • One pound of chicken (wings and breasts work best, but any chicken broken down works)
  • Two celery stalks
  • Two large carrots
  • One large potato
  • 10 kernels of whole allspice
  • 1 bay leaf
  • 1 teaspoon of thyme
  • Salt and pepper to taste

Directions:
  1. Bring water to a boil
  2. Add two table spoons of lemon juice
  3. Add chicken, salt, black pepper, thyme, allspice kernels, bay leaves, and celery stalks
  4. Cook for ten minutes
  5. Peel potato and carrots
  6. Add potato, carrots and two more table spoons of lemon juice
  7. Cook for an additional twenty minutes or until the potatoes and carrots are soft.

For B, then I place in my Magic Bullet and blend!
